Ingredients

  • 2 cups of cauliflower (grated via cheese grater or food processor)
  • 1/2 cup of cucumbers (diced)
  • 1/2 cup of tomato (diced)
  • 12 oz of chicken breast
  • 1/4 cup of fresh mint
  • 3/4 cup of flat parsley
  • 4 tsp of lemon juice
  • 1/4 tsp of salt
  • 2 tsp of extra virgin olive oil

Directions

  • Cut the chicken breast in 1/2″ cubes and sauté in a pan on low heat for about 15-20 mins; add salt and black pepper for test. Set aside.
  • Place grated cauliflower in a bowl and add a wet paper towel on top of the cauliflower prior to microwaving it for 1.5 mins.
  • Mix in the tomato, cucumbers, spices, lemon juice, olive oil, and chicken with the grated cauliflower prior to serving.
